Young leaves are tender with a peppery zing to them. A great cut-and-come again crop since each time you cut a leaf, it stimulates production of more foliage. A single plant will keep producing over a long growing season. Don’t let the leaves get too big as they lose their tender texture the larger they get. These plants reach about 2 1/2 feet tall and 12″ wide.

Arugula is a cool weather crop. Start indoors 3-4 weeks before your last average frost. Sow 1/4″ deep in seed-starting mix. If soil is kept moist around 40-55° F, germination is in 3-4 days.
Before transplanting into the garden, you will need to harden off the seedlings so they can adjust to the outdoor weather. Move them outside in a sheltered place off and on for a week, letting them sit outside for a longer time each day.
Plant in the garden 10-12″ apart.
